The original foodies, Brandon Cahill and his father Mike, opened their first of two Smoke Shack BBQ food trucks in 2017. As lovers of all things barbecue, the father-son duo was inspired by Nana Jennette Cantone’s homemade barbecue sauce recipe to continue their business venture and expand into the Cahill franchise. While it may seem easy at first, running a restaurant from inside a truck has its challenges — but they never let that stop them.
Mike Cahill grew up learning and working in his family’s butcher shop. This helped lead his son, Brandon, to study culinary arts at William Floyd High School and Johnson & Wales University. From a young age, Brandon was around the food truck industry, working for his late uncle, Charlie Cohan, at Riverhead Raceway and other fairs and events.
Where We Are Now
Nowadays, hungry guests can get a taste of Brandon Cahill’s grandmother’s renowned barbecue sauce recipe at Smoke Shack BBQ. The eatery boasts an orange and green décor, a nod to the colors of the Cahill’s two food trucks. Long-time fans of the trucks from their state fair days or their former Center Moriches home base will be happy to recognize the menu’s most popular items, as well as newer, finger-licking additions!

The quality of their food is priceless. Had the BBQ bacon mozzarella burger and pulled pork tacos. Their burgers are huge and taste amazing! Their pulled pork is by far the best I’ve ever had. The sweetness of the bbq sauce on the pulled pork mixed with the coleslaw on the tacos just tops it off. Hands down, best bbq food on Long Island. Definitely worth it to give it a try.
Never tried this place as a food truck but I would’ve if I knew of it. I ordered brisket sandwich for 13 bucks and I’m telling you now it’s well worth it even just once! It had ud say about a pound of tender brisket on there and a very nice slaw. 10/10
Btw the barbeque is really good it must be a recipe they have, heads up its a sweeter bbq in a good way.
The brisket was fresh and it really was cooked to order! First time for my family and my father got the Motherload, no disappointment there everything was delicious and the staff was super friendly! Our new go to BBQ joint in town.
